Peach Caprese Sandwich

This summer inspired peach caprese sandwich is delicious with sweet tomatoes, yellow peaches, fresh mozzarella, basil leaves, topped with olive oil, salt and pepper.

Hi! This is Andrea from Cooking with a Wallflower and I’m back this week to share with you a brand new recipe on Ask Anna just in time for the end of summer.

I love that summer brings so much fresh produce to both the supermarket and the farmer’s market. There are so many options to pick from and everything tastes so much better when they’re in season.

Peach Caprese Sandwich

For that reason, I wanted to add my favorite summer produce to this sandwich before they go out of season again. Yellow peaches are my favorite some fruits. They’re so sweet with that slight tangyness. Plus fresh tomatoes taste so much better when they’re in season. So sweet and flavorful. And those are the flavors that I want to highlight in this peach caprese sandwich.

Peach Caprese Sandwich

Sandwiches are so simple to make and so perfect for when you need a quick meal with little prep. You can pack it for an easy lunch at work or for a picnic in the park during the weekend.

Peach Caprese Sandwich

Prep all the ingredients and set them on the counter. This makes it so much easier to assemble.

Toast your bread and layer the sliced peaches, mozzarella, tomatoes and basil leaves. Drizzle olive oil and season with salt and pepper. And if you’re wanting to elevate your peach caprese sandwich a little more, drizzle honey on the outside of the sandwich and top with flaky salt. It gives a little more depth to the caprese sandwich and works so well too!

Serve the peach caprese sandwich warm or cold.

Ingredients
  • 4 slices of bread
  • 4 oz mozzarella, sliced
  • 1 ripe roma tomato, sliced
  • 1 ripe yellow peach, sliced
  • 1-2 sprigs of basil
  • Honey for drizzling
  • Sea salt for sprinkling
Instructions
  1. Toast your bread and layer the sliced peaches, mozzarella, tomatoes and basil leaves. Drizzle olive oil and season with salt and pepper. And if you’re wanting to elevate your peach caprese sandwich a little more, drizzle honey on the outside of the sandwich and top with flaky salt.
