Can you believe that it’s already June, and almost halfway through the year? So much has happened in the past few months!
It’s starting to get warmer and warmer here, and I find myself thinking about all the summery snacks and meals.
I’m always looking for quick and easy ideas with simple ingredients. But for summer, I also want something that’s kinda cooling. Because when it’s hot outside, I really want to do as little work as possible.
This garlicky egg toast with herbs is simple and delicious. It’s also super flavor and the kind of snack that I will want to eat over and over again. It can also be made into a quick breakfast too. Hope you’ll enjoy it as much as I do.
In a small or medium pot, heat water until it comes to a boil. Add two large eggs to the water and cook for about 6-7 minutes before removing the eggs from the pot with a slotted spoon. Transfer the eggs to an ice bath and let it cool for at least several minutes before peeling. This makes it easier to peel.
In a medium sized bowl, whisk together plain Greek yogurt, minced garlic, and za’atar seasoning until combined.
Toast bread until browned. Spread the za’atar yogurt spread over the bread, then add an egg to each toast. Top with finely chopped fresh herbs, fried shallots, and chili peppers.
Serve the garlicky egg toast with herbs immediately.
