We’re getting close to the end of summer, and I am trying to soak up every little bit of it while I can. All those summer produce and stone fruits. All those sweet berries. It’s always hard to see them go out of season so very quickly. What will you miss most once summer is over?
Today I wanted to share with you this peach jam burrata toast. I actually love toast as a simple meal for breakfast or a light lunch or even as an afternoon snack. There’s so many different ways to dress toast up and make it into something so much more.
So to make toast perfect for summer, I wanted to use a fresh batch of peach jam, topped with creamy burrata and then lightly season with thyme leaves and salt and pepper. As simple as this may sound, it is packed full of flavor and it is sooo delicious. The sweetness from the peach jam and the creaminess of the burrata is everything.

Toast slices of bread. Spread peach jam over the toast. You can use either store bought or homemade peach jam. Top the toast with sliced burrata. Then add thyme leaves, freshly grounded black pepper, and flaky sea salt.
Serve it immediately.
