I hope you’ve had a wonderful summer so far. It’s been a pretty eventful one for me. I’ve been hiking through Muir Woods and Point Lobos State Reserve. I went strawberry picking, pie tasting, apple cider tasting, and clam chowder sampling. It’s been such a fun summer so far, and I can’t wait to see what else is in store for the upcoming weeks!
Since it’s already the middle of summer (time passes by sooo fast!), and I know how it’s been sooo ridiculously hot these past few weeks, especially if you live inland. I thought this would be the perfect time to share with you a brand new drink: watermelon hibiscus sparkling soda.
Using just a few simple ingredients: watermelon juice, hibiscus tea, sugar, and club soda, mix them together, and you get one deliciously unique and refreshing drink. It’s easy to make and great for serving family and friends during summer gatherings. You’ll want to keep this one in your recipe repertoire.
In a small pot, heat water over medium heat with a bag of hibiscus tea and a little bit of sugar. Allow the hibiscus tea to steep for a few minutes before removing the teabag. Let the hibiscus tea to cool down for several minutes.
Pour watermelon juice into a pitcher and add hibiscus tea. Stir to mix.
When ready to serve, pour the watermelon hibiscus tea into glasses and top with club soda and crushed ice. Garnish with mint or basil.
Serve the watermelon hibiscus sparkling soda cold. Enjoy!

- 1 cup sparkling water/soda

We tried it last weekend, and it was delicious! I plan on preparing it for our Christmas garden party (we live in Australia), and I believe it will be the star of the entire evening. I always loved watermelon, but I never tried to prepare anything with it until now. I must say, it was a definite success.
