It’s May, which means there’s just a little over a month left before it’s officially summer! Are you as excited as I am? I have so many things planned for these next couple of weeks. Graduations to attend, birthdays to celebrate, just to name a few. What will you be doing these next few weeks? Any plans for the summer?
I’ve been obsessed with chia puddings lately. Have you tried them before? Sooo good.
It took me awhile to get into the chia craze, but now that I’ve been making overnight chia pudding for breakfast, I can’t resist trying different versions to find my favorite combination. In today’s version, chia pudding is mixed with your favorite jam and then topped with your favorite berries.
The chia pudding is slightly sweetened with a hint of vanilla. It’s delicious, healthy, very filling and it’s the perfect start to your day!
Pick a jar or a large glass that can hold about 2 cups.
Add chia seeds to the glass with granulated sugar. Pour vanilla almond milk into the jar and mix until all the chia seeds are incorporated. Sometimes the chia seeds clump together so make sure that all the chia seeds are well mixed.
Refrigerate the chia pudding overnight to allow the chia seeds to become a pudding like consistency.
When you’re ready to serve the chia pudding, place jam at the bottom of a small glass, then spoon chia seed pudding over the jam. Top the chia seed pudding with fresh berries and mint leaves.
Serve the overnight jam chia seed pudding cold.
