A few weeks ago my daughter and I made up this gluten free muffin recipe and I couldn’t believe how good it was! The combination of coconut oil, bananas and chocolate chips are delicious!!! These are super easy to make and I promise they will be a hit among family and friends!
Gluten Free Banana Chocolate Chip Muffins
1 3/4 cups sugar
2 eggs
1 cup coconut milk
1/2 cup coconut oil
1 tsp vanilla
3 ripe bananas
1 1/3 cups gluten free flour (I recommend this one)
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
Preheat oven to 350 degrees.
In a large bowl combine sugar, eggs, coconut milk, coconut oil and vanilla. Mix until well blended then add the ripe bananas and mash them up and mix them into the ingredients.
Add flour, baking soda and salt and stir until the ingredients are combined.
Stir in the chocolate chips.
Line muffin pan with liners and pour the batter into the cups. Bake until a toothpick inserted into the muffins comes out clean, about 15-20 minutes.
Makes about 24 muffins.
