Gluten Free Banana Chocolate Chip Muffins |

- 1¾ cups sugar
- 2 eggs
- 1 cup coconut milk
- ½ cup coconut oil
- 1 tsp vanilla
- 3 ripe bananas
- 1⅓ cups gluten free flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup chocolate chips
- Preheat oven to 350 degrees.
- In a large bowl combine sugar, eggs, coconut milk, coconut oil and vanilla. Mix until well blended then add the ripe bananas and mash them up and mix them into the ingredients.
- Add flour, baking soda and salt and stir until the ingredients are combined.
- Stir in the chocolate chips.
- Line muffin pan with liners and pour the batter into the cups. Bake until a toothpick inserted into the muffins comes out clean, about 15-20 minutes.
