I hope you’re obsessed with peaches as much as I am. It’s the perfect time to indulge in them while they are readily available and oh soo sweet and soo juicy. I’m personally a fan of yellow peaches and nectarines because they have that perfect balance of sweet and tart. And I have to admit like a prefer my peaches and nectarines hard rather than soft. Which kind of goes against what everyone else around me prefers. How do you like your peaches and nectarines? Or which do you prefer, white or yellow?
This month, I want to share with you these peach burrata toast. Super easy to make, so tasty, and not much work needed. So it’s the perfect light bite for warm summer days. I love that this toast has the creaminess of the burrata cheese, the sweetness of the peaches, and the light refreshing dressing topped with torn mint. So sooo good.
In a small bowl, whisk together honey and lemon juice. Add slices of peaches and toss until lightly covered in the honey lemon dressing.
Cut bread into thin or thick slices. It just depends on your preferences. Lightly toast the bread.
Spread burrata cheese onto the slices of bread. Top with the slices of peaches. Add torn mint on top and drizzle with the leftover honey lemon dressing.
Serve the peach burrata toast as a light bite.

- 1 tablespoon honey
- 2 teaspoons lemon juice
- 1 large yellow peach, thinly sliced
- ½ loaf baguette, sliced
- 4 ounce burrata
- pinch of salt, more to taste
- Mint leaves

- Spread burrata cheese onto the slices of bread. Sprinkle a pinch of salt over each of the toast. Top with the slices of peaches. Add torn mint on top and drizzle with the leftover honey lemon dressing.
- Serve the peach burrata toast as a light bite. Add more salt to taste.
