Crusty bread topped with fresh peaches, creamy burrata, torn mint leaves, and a honey lemon dressing. Super fresh, super easy to make, and super delicious, this peach burrata toast is the perfect light bite for summer guests.
- 1 tablespoon honey
- 2 teaspoons lemon juice
- 1 large yellow peach, thinly sliced
- ½ loaf baguette, sliced
- 4 ounce burrata
- pinch of salt, more to taste
- Mint leaves
- In a small bowl, whisk together honey and lemon juice. Add slices of peaches and toss until lightly covered in the honey lemon dressing.
- Cut bread into thin or thick slices. Depends on your preferences. Lightly toast the bread.
- Spread burrata cheese onto the slices of bread. Sprinkle a pinch of salt over each of the toast. Top with the slices of peaches. Add torn mint on top and drizzle with the leftover honey lemon dressing.
- Serve the peach burrata toast as a light bite. Add more salt to taste.
