I can’t believe it’s already May, but it finally feels like spring where I am. After weeks of fog, rain, and overcast skies, we’re finally getting clear sunny days, and it’s so perfect for strolling in the parks during the weekend or basking in the sun. Is it finally spring where you are?
I wanted to share this matcha green tea chocolate chip bread with you this month. I feel like most days my schedule is just so ridiculously busy. I start work super early in the morning and when I come home, there’s barely time to do anything before it’s time for bed. So I like to have breakfast prepared in advance so I can just grab and go. Otherwise, there’s no time for breakfast at all.
This matcha green tea chocolate chip is lightly sweetened. You have the rich flavors of the semi sweet chocolate chips and the earthy hint of matcha green tea. If you like both matcha green tea and chocolate, this bread is perfect for you. Plus, it’s easy to cut into slices and bring with you on the go for breakfast or as a mid afternoon snack.
Preheat the oven to 350F. Lightly grease a 9×5 inch loaf pan with nonstick cooking spray or with parchment paper.
In a large mixing bowl, combine all purpose flour, matcha powder, and baking soda until well incorporated.
In a medium sized mixing bowl, whisk together egg, brown sugar, and granulated sugar until combined. Pour in buttermilk, vegetable oil, and vanilla extract, then mix until incorporated.
Pour the wet ingredients into the dry ingredients, and mix with a spatula until well combined.
Fold in the chocolate chips.
Pour the batter into the loaf pan. Add extra chocolate chips on top if desired.
Bake the bread for about 40-45 minutes. Test the bread for its readiness by inserting a clean toothpick through the center. If the toothpick comes out clean, the bread is done.
Allow the matcha green tea chocolate chip to cool down for several minutes before slicing.
Serve the matcha green tea chocolate chip warm or cold.
