I can’t believe we’re half way through the year already. And the official start of summer is just around the corner. Warm days, stone fruits, sweet berries, walks on beaches. It is seriously the life. So many things to do even if you can’t get away for the summer.
Lately, I’ve been really into earl grey everything. I love the flavor of earl grey. The fragrance is so strong that it stands out perfectly in anything that it’s added to. Which is why I knew I had to add them to shortbread cookies.
Shortbread cookies are one of my favorites. The buttery goodness of these cookies are so addictive. Add a touch of earl grey and all of a sudden these cookies are taken to the next level. They’re perfect for snacking, for road trips, and of course, for any afternoon tea parties you might be hosting or attending.
Preheat the oven to 350F. Line a baking sheet with parchment paper or a silicone baking mat.
In a medium sized mixing bowl, cream together butter and powdered sugar until smooth.
Add all purpose flour and salt. Break open an earl grey tea bag, and add all the contents of the tea bag into the batter. Discard the tea bag. Mix until the cookie dough comes together.
Roll the dough out on a lightly floured surface until it’s about 1/4 inch thick.
Cut out the cookies into circles with a cookie cutter or shape with your hands.
Place them onto the baking sheet, and bake for about 20 minutes until the edges have browned.
Serve these earl grey shortbread cookies with your favorite tea.
