In honor of National S’mores Day (what a yummy day), on August 30th, I wanted to share a delicious gourmet s’more filled with chocolate, ooey gooey caramel and marshmallow.
When I think about s’mores I think campfires, Hershey’s chocolate and graham crackers, but when I wanted to create a s’more for National S’mores day, I wanted it to be something different, something unique, something decadent. I started thinking about all my favorite ooey, gooey things and the first thing I thought of was caramel.
The next thing I thought of were chocolate chip cookies, which are a favorite in our house. So I figured why not just combine the two!? And here’s what I came up with… decadent s’mores made from chocolate chip cookies, dark chocolate caramel squares and a perfectly toasted marshmallow.
They are super easy to make and can be enjoyed around the campfire, the backyard fire pit, or even just the kitchen, if you’re having a s’more craving.
Ooey gooey goodness and chocolate, caramel, marshmallow perfection! Once you’re done eating one (or two, or maybe even three) there is sure to be a sticky mess, which is why I always have my Huggies® wipes nearby.

- Chocolate chip cookies (made with premade dough, or from scratch)

- Ghirardelli Dark & Sea Salt Caramel squares
- Ghirardelli Dark & Sea Salt Caramel squares
- Marshmallows
- Marshmallows
- Roasting sticks
- Bake the chocolate chip cookies according to package directions.
- Allow the cookies to cool completely.
- Place 1 Ghirardelli Dark & Sea Salt Caramel square on top of 1 upside down chocolate chip cookie, set aside.
- Toast 1 marshmallow to perfection.
- Once the marshmallow is toasted, pick up another chocolate chip cookie and use it to slide the marshmallow off the roasting stick, onto the chocolate caramel square and cookie that was set aside. Place the cookie on top of the marshmallow and enjoy!
