With the chilly fall weather rapidly taking over mornings and evenings, I’m always looking for something warm and cozy, especially when it comes to food. And for those mornings when you leave the house before the sun is even up, you’ll need something warm and comforting and simple to make.
Have you ever had an oatmeal latte? If you haven’t, you’re missing out! An oatmeal latte is the best of both worlds. You can have breakfast and your morning pick me up, all in one cup. This version of oatmeal latte is perfect for fall. You have pumpkin puree and maple syrup. So soo good.
Plus, it’d be perfect for Thanksgiving morning when you need a little something to keep you going throughout the day. Or for the morning after when you need something light after all the food you’ve eaten the night before.
In a small pot, add almond milk, maple syrup, pumpkin puree, vanilla extract, ground cinnamon, and old fashioned oats. Bring the mixture to a simmer. Cook and stir for about 5-7 minutes until the oatmeal is steaming before removing the pot from heat. Use a fork or a small whisk to stir until the milk becomes foamy. Alternatively, you can also use a frother. It makes life so much easier!
Divide the oatmeal mixture into two cups and pour the strong brewed coffee into each cup. If you like, you can top your oatmeal latte with whipped cream and granola.
Serve the maple pumpkin almond oatmeal latte warm and eat with a spoon.
