Can you believe that we’re already so close to Christmas? Less than two weeks left! What?! How does time pass by so fast these days?
I have barely recovered from Thanksgiving food coma and now I’m ready to dive into all the Christmas baked goodies!
These cranberry crisp bars are so delicious and simple to make. It takes just a few ingredients that you probably already have waiting to be used in your kitchen or your pantry.
A bite of this cranberry crisp bar is bursting with the sweetness and tartness of fresh cranberries. The brown sugar butter streusel on top makes this cranberry crisp taste a little bit like a cookie too.
Seriously, SO good. You’ll want to keep all of it to yourself.
Preheat the oven to 375F.
Line a 9×9 inch baking pan with nonstick cooking spray or parchment paper. It might just be easier to clean using parchment paper.
In a medium sized mixing bowl, stir together brown sugar, butter, all purpose flour, nuts (I used a combination of almonds and walnuts), and ground cinnamon until the batter becomes crumbly. They’ll appear pea sized like. If they’re smaller or bigger in size, that’s perfectly fine too.
In a small sized mixing bowl, toss together fresh cranberries, granulated sugar, lemon juice, and all purpose flour.
Once the cranberry mixture is well combined, pour the mixture into the baking pan.
Next, pour the brown sugar butter mixture on top of the cranberries into a relatively even layer.
Bake the cranberry crisp for about 20-25 minutes until the top has turned a golden brown and the cranberries appear jam like.
Allow the cranberry crisp to cool down completely before cutting them into bars.
Serve the cranberry crisp bars warm or cold.
