It’s been a cold and wet winter for us in the San Francisco Bay Area, and I am so glad that the sun has finally decided to come out! With spring just around the corner, I thought it would be the perfect time to share with you a spring/summer drink that you and your guests would love.

Have you ever had popping boba? They’re usually added to milk tea or used as a topping for your frozen yogurt. They’re round and colorful and when you bite into them, they pop and fill your mouth with fruity juice. These red currants remind me of them.

I spotted them at the store and I just couldn’t resist buying them for looks alone! I know. Buying food based on looks isn’t exactly the best way to make a decision, but still. These red currants make great toppings. They’re refreshingly tart so they add their own unique flavor.

To make this red currant lime soda, add red currants, sugar, and water into a small pot over medium heat. Cook the red currants for a few minutes until the red currants have softened and burst open.

This is your red currant simple syrup, perfect for flavoring your soda.

Divide the red currant simple syrup into two small glasses. Add freshly squeezed lime juice into each of the glasses. Next add sparkling water or club soda. Always add the soda at the end so that you will still have bubblyness. Top with crushed ice.

Serve this red currant lime soda cold.

Ingredients
  • ½ cup red currants
  • 1 tablespoon granulated sugar
  • 2 tablespoons water
  • juice of one lime
  • 2 cups club soda
  • crushed ice for topping
Instructions
  1. Add red currants, sugar, and water into a small pot over medium heat. Cook the red currants for a few minutes until the red currants have softened and burst open.
  2. Divide the red currant simple syrup into two small glasses. Add freshly squeezed lime juice into each of the glasses. Next add sparkling water or club soda.Top with crushed ice.
  3. Serve this red currant lime soda cold.
