Quick Strawberry Jam
  • 2 cups chopped strawberries
  • 3 tablespoons granulated sugar
  • ½ tablespoon water
  • ½ teaspoon cornstarch
Iced Strawberry Matcha Latte
  • 1½ teaspoons matcha powder
  • 1 cup vanilla almond milk
  • 1-2 tablespoons maple syrup or brown sugar
  • 2 tablespoons strawberry jam
  • crushed ice
  1. In a small pot, add sliced strawberries, granulated sugar, and a little bit of water. Cook the strawberries over low heat for about 10 minutes until the strawberries have turned jam like in consistency. Let the strawberries sit and cool for several minutes.
  2. In a mason jar, or a large glass, add matcha powder and a little bit of almond milk. Whisk until the matcha powder turns into a smooth paste. Add the rest of the almond milk and either maple syrup or brown sugar, then whisk until the matcha powder has completely dissolved.
  3. In small mason jars or glasses, add the strawberry jam to the bottom of the glasses. Pour the matcha latte over the strawberry jam. Top the strawberry matcha latte with crushed ice.
  4. Serve the iced strawberry matcha latte cold. Store the rest of the strawberry jam in an airtight container and place in the fridge.
