Sun-Dried Tomato Pistou Pasta with Arugula

  • 1 pound spaghetti
  • 1 cup arugula
  • 1 cup sun-dried tomatoes, drained
  • 1 cup basil leaves
  • ⅓ cup olive oil
  • 1 clove of garlic
  • Salt
  1. Cook the pasta noodles according to the direction on the package. Once the pasta is soft to your liking, drain the water and run the pasta through cold water to prevent the noodles from sticking to each other.
  2. In a food processor, add sun-dried tomatoes, basil, olive oil, a clove of garlic, and salt. Process the ingredients until smooth.
  3. Toss the pasta with some (not all) of the sun-dried tomato pistou and argula. Season with more salt if desired.
  4. Serve the pasta warm or cold.
