Oatmeal Raisin Cookie Dough Bites

  • 1½ cups gluten free rolled oats
  • ½ cup raw cashews
  • ¼ cup unsweetened shredded coconut
  • ¼ cup pure maple syrup
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ cup raisins
  1. Place oats, cashews, and coconut into food processor or high-powered blender (I used my Blendtec). Blend on high until finely ground.
  2. Add the maple syrup, melted coconut oil, vanilla and cinnamon. Pulse until the dough begins to form.
  3. Scoop dough into small bowl. Add raisins and stir to combine.
  4. Scoop and roll into 16 cookie dough bites. Store in air-tight container in refrigerator.
