These lychee rosé wine otter pops are perfect for hot summer days and easy to make by blending lychee and rosé wine and then pouring into otter pop sleeves.

Hi! This is Andrea from Cooking with a Wallflower. I’m back this month to share with you a brand new recipe just in time for summer.

It finally feels like summer in San Francisco, and I am savoring every moment of the warmth and sunshine. We can finally go outside and enjoy the gorgeous weather. With the summer heat almost upon us, I thought I would share with you these lychee rosé wine otter pops.

These are super easy to make and soo refreshing. It embodies the flavor of summer. I mean, what says summer better than rosé wine and exotic fruits. These boozy otter pops are the adult version of those otter pops we all love from our childhood. It’s perfect for gatherings and summer parties. And just for cooling off on a hot day.

Lychee Rosé Wine Otter Pops

You can use fresh lychee or canned lychee for this recipe. I prefer the canned version because it’s simpler and you don’t have to worry about peeling or removing the seeds from each individual fruit. It’s also easier to find the canned version.

Remove lychee from the can. You’ll want about a pound of lychee. Reserve about a half cup of the lychee syrup for added sweetness. If you don’t want the extra sweetness, you can skip this step.

Place the lychee in a blender or a food processor. Pour in half a bottle of rosé wine. Blend the two ingredients together until smooth.

Use a funnel to pour the lychee rosé wine mixture into otter pop sleeves. I bought the Frozip brand from Amazon and it comes with a funnel.

Freeze the otter pops overnight.

Serve these lychee rosé wine otter pops cold.

Serves: 10-12 otter pops
Ingredients
  • 2 - 20 ounce cans lychee, drained
  • ½ bottle of rosé wine
Instructions
  1. Remove lychee from the can. You’ll want about a pound of lychee. Reserve about a half cup of the lychee syrup for added sweetness. If you don’t want the extra sweetness, you can skip this step.
