Peach Burrata Toast

Crusty bread topped with fresh peaches, creamy burrata, torn mint leaves, and a honey lemon dressing. Super fresh, super easy to make, and super delicious, this peach burrata toast is the perfect light bite for summer guests.
Ingredients
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • 1 large yellow peach, thinly sliced
  • ½ loaf baguette, sliced
  • 4 ounce burrata
  • pinch of salt, more to taste
  • Mint leaves
Instructions
  1. In a small bowl, whisk together honey and lemon juice. Add slices of peaches and toss until lightly covered in the honey lemon dressing.
  2. Cut bread into thin or thick slices. Depends on your preferences. Lightly toast the bread.
  3. Spread burrata cheese onto the slices of bread. Sprinkle a pinch of salt over each of the toast. Top with the slices of peaches. Add torn mint on top and drizzle with the leftover honey lemon dressing.
  4. Serve the peach burrata toast as a light bite. Add more salt to taste.
