Raw Ozuke Salad
Spring and Summer always means that food should be Light, Refreshing and EASY to make. Our family enjoys a Gluten and Grain Free lifestyle along with enjoying treats that are LOW glycemic, by using Raw Honey and Organic Maple Syrup to sweeten our desserts and any special treats that might be enjoyed throughout the day. While our family doesn’t eat a Full Raw diet, we do make a point to incorporate Raw elements into our weekly meals. One of our favorite things to make during the Spring and Summer months is this Raw Ozuke Salad.
You are probably wondering, what in the world is Ozuke! Ozuke is a Fermented food that has beneficial probiotic qualities. The great thing about fermented foods is they help balance the microbes in our gut, and increase probiotics and enzymes, they can have a positive impact on our physical and even mental health. fermented foods like Ozuke help to also improve digestion, provide probiotics, increase nutrient absorption, restore bacterial balance in the gut and increase immunity.

Our family enjoys eating our Ozuke Salad with Kelp Noodles. These noodles are very versatile and so easy to use, they are crunchy when eaten Raw and absorb flavors very well. ( they are flavorless on their own ) They can also be added to warm soups and broths as a Pasta or egg noodle replacement. If you are unsure of the texture or just don’t want to go the Kelp noodle route, you can replace them with Spiralized Zucchini, Yellow Squash or Cucumbers.
The Salad itself is SUPER simple to put together. You will rinse your Kelp Noodles in fresh water according to package instructions, cut if you desire a shorter length. Wash your Raw Organic Vegetables of choice and chop. Open your Raw Ozuke and place into your bowl of Kelp Noodles, for the beautiful purple color just mix your Ozuke and Noodles together. Top with your vegetables and enjoy your Raw, Probiotic rich salad.
