A few months ago I shared a post with you telling you why I am the “Real Deal”, well those same folks at Got Milk have asked me to share something else with you, a “Real Deal Recipe”. So today I’m excited to share two recipes that are the real deal. Both of these recipes are Real & Simple, they contain no additives, no artificial coloring, no refined sugar and no processed materials; not only are they delicious but they are healthy recipes for your family and I guarantee that everyone will love them!
Let’s start with a scrumptious dinner, this is a very healthy enchilada recipe. This is a great recipe for any season and who doesn’t love enchiladas!?
Bean Enchiladas
(from Dr. Joel Fuhrman’s book, “Super Immunity”)
Serves 6
1 medium green bell pepper, seeded and chopped
1/2 cup sliced onion
1 cup no-salt added or low-sodium tomato sauce, divided
2 cups cooked pinto or black beans (or 1 (15-ounce) can no-salt-added or low-sodium pinto or black beans, drained
1 cup frozen corn kernels
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1/2 teaspoon cayenne pepper, optional
1 tablespoon chopped fresh cilantro
3/4 cup Mexican cheese blend, plus 1/4 cup
6 corn tortillas
1 avocado
Preheat oven to 375 degrees.
Saute the green pepper and onion in 2 tablespoons of the tomato sauce until tender. Stir in the remaining tomato sauce, beans, corn, chili powder, cumin, onion powder, cilantro, cayenne (if using), and cheese. Spoon about 1/4 cup of the bean mixture on each tortilla and roll up. Top with cheese and bake for 15 minutes. Slice avocado and serve on the side or on top of the enchiladas.
I love how bright and colorful all the ingredients are! You know it’s good for you if you’re cooking with fresh, healthy ingredients.
This recipe is the “real deal” because it’s packed full of protein and nutrients but your kids {and husband} would never guess it!
Now who wants dessert!? How about an old classic, a banana split? Only this isn’t your typical banana split, this one is packed full of antioxidants, fiber and it has no sugar added! It’s the perfect after dinner treat because it won’t get your kids wound up before bedtime!
Banana Berry Split
Serves 2
2 small bananas, peeled
1 cup plain, or vanilla yogurt
2 tablespoons lowfat (or homemade) granola
1 cup blueberries and/or other fresh berries
Place each banana on a narrow plate, or in a bowl. Slice them in half lengthwise. Spoon the yogurt onto the banana halves and then top with granola and fresh berries.
This is a super fun dessert because everyone likes a banana split and you can really make this one your own! My daughter loves honey so I drizzled honey all over hers! For an even heartier dessert add nuts, dried fruit, chia seeds, and/or more! Use your imagination and your kids will love it!

we always have a hard time with breakfast….that is until i found these pancakes made with greek yogurt and I add whatever fruit we have on hand (bananas and berries are favorites). Bonus-I don’t feel guilty for feeding them tons of sugar!
My family’s favorite recipe is a Quinoa Salad made with peppers, kidney beans, garbanzo beans, sweet corn, and onion. It’s so light and filling at the same time.

Jessica Seinfeld’s Deceptively Delicious “Graham Cracker Ice Cream Sandwiches”
Number of Servings: 16 (Have extra graham crackers because it always makes more for me!)
Ingredients
2 cups lowfat plain yogurt
1 cup sugar
1 cup lowfat buttermilk
2 TBSP lemon juice
Grated zest of 1 lemon
16 cinnamon or honey graham rectangles (halved)
Shredded coconut, if desired
Directions
In a large bowl, whisk together yogurt, sugar, buttermilk, lemon juice, and zest. Transfer to small bowl, cover, and freeze 60-90 minutes, or until mixture thickens. Scoop out and press about 1/4 cup of the semi-frozen yogurt mixture between two graham squares. Wrap each in waxed paper and freeze until firm. Dip all four edges in optional coconut, if desired.
One of my favorite healthy desserts is sticking a frozen banana int he blender and whipping it until it become an “icecream” like texture. After that I add in some unsweetened coca powder or almond butter for added flavor!

My family loves bread – especially homemade! We love this easy Irish Soda Bread with savory dishes or as a snack spread with butter and jam.
EASY and HEALTHY SODA BREAD:
4 cups whole wheat pastry flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon sea salt
2 large eggs
1 1/4 cups buttermilk
1 cup sour cream
Preheat oven to 350 degrees. In a large bowl, mix the dry ingredients together. In another bowl, blend eggs, buttermilk, and sour cream together. Stir into the dry ingredients until the flour is moistened and you have a thick batter. Shape into a ball and place in a large iron skillet. Make a few deep cuts in the top of the dough with a sharp knife and place in the oven. Bake 65 – 75 minutes or until a wood pick inserted in the center tests clean. Cool in skillet for 10 minutes before turning out onto a wire rack to cool completely.
I have just recently started cooking with whole foods. My husband has been slow to appreciate this change, but one dish that we all enjoy (and he loves) is Couscous Stuffed Bell Peppers with tomatoes. I like this recipe because adding the fresh tomatoes or organic diced tomatoes added flavor and moisture to the couscous that is perfect and different from other couscous oil based dishes. It is also a perfect meal if you need to clean out and use up the veggies in the fridge. You can make it with or without the peppers and with or without the feta. So yummy and good for you!
One of our favorite desserts is kiwi sorbet. It is super easy:
1 lb of peeled kiwi
3/4 cup of sweetner
1 tbsp of lime juice
Mix kiwi and lime juice and sugar in a blender until smooth. Then pop it in an ice cream maker for 20 minutes and eat or stick in the freezer. It is really good and everyone loves it, a perfect combination of sweet and sour.
Healthy? Now that is asking a lot. My husband and I, love making a Chicken Jerk Salad. The flavors are amazing!

Creamy Layered Fruit Sensation
3 Tbsp. orange juice
1/4 tsp. almond extract
1 pkg. (10 oz.) prepared prepared angel food cake, cut into 2-inch cubes
2 pkg. (1 oz. each) Vanilla Instant Pudding
2-1/2 cups cold milk
1-1/2 cups thawed COOL WHIP Whipped Topping, divided
2 pkg. (12 oz. each) frozen unsweetened mixed berries (raspberries, blueberries, sliced strawberries), thawed, well drained
MIX juice and extract. Drizzle over cake cubes in large bowl; toss to coat.
BEAT pudding mixes and milk in medium bowl with whisk 2 min. Stir in 1 cup COOL WHIP.
RESERVE a few berries for garnish. Place half the cake cubes in 2-qt. glass bowl; top with layers of half each of the remaining berries and pudding mixture. Repeat layers. Refrigerate 2 hours.
Top with remaining COOL WHIP and reserved berries just before serving.

We like this very simple Chicken Burger.
Makes 4 patties
1 lb lean ground chicken (my grocery store has this packaged)
1/2 of a med size apple peeled and chopped very fine (1/4 cup)
1/2 of a med onion chopped chopped (1/4 cup)
Mix together
Heat about a TBL spoon of olive oil and cook in frying pan. I like to use my cast iron frying pan.
You can serve this on a bun with a half of a slice of sharp cheddar cheese. (optional)
*make sure you completely cook the chicken.
ENJOY!
My family’s favorite healthy is beef bolognese ( I use lean ground beef or turkey) with whole wheat pasta! We normally have broccoli, squash or a salad with it!
We like to make rainbow fruit kabobs with whatever seasonal fruit is available. Then we dip them in yogurt
I love love love making green smoothies in my Blendtec! I make them for breakfast and lunch all the time. They’re LOADED with nutrients, and taste like dessert! What an awesome combo. Some of my favorite flavors are orange/pumpkin/spinach, pineapple/peach/kale, and pear/blueberry/kale!

I’m terrible about eating vegetables, but this smoothie recipe is a great way to get veggies in my diet. And it’s first thing in the morning! I blend 1 banana, 2 big handfuls of spinach, coconut milk and a teaspoon (or so) of cinnamon. It tastes great!
We like anything with lots of veggies. Personally I can’t get enough of lentil soup. We get protein and feel full with low cost.

we love layered bean dip for chips or veggies. Just mix in refried beans & sour cream, sprinkle with olives, onions, avocadoes, tomatoes, lettuce, cheese & salsa – yum!
One of my favorite recipes is white chicken chili.
4 cans white beans
3 cans chicken broth
1 lg onion sauted
4 cloves garlic
1 – 7oz can green chilies
1 lb cooked shredded chicken
1 tsp cumin
2 tsp oregano
1 cup sour cream
1 cup jack cheese
salt & pepper to taste
Add everything – cook in crock pot on low for 2 hours or stove top – bring to boil and simmer covered 1 hr.
Our favorite healthy way to start our day is Oatmeal Sundaes! My boys get very excited about them and I feel like they are starting the day out right. I make old fashioned oats as directed but add flaxseed to it. Depending on the day, I might also add cranberries, raisins, chopped apples or dried apricots. When it has cooked (I usually use a big bowl in the microwave) I spoon it over frozen blueberries (this helps it to cool down fast). After a minute or two, I mix in yogurt. (This turns it purple from the blueberries which my boys think is really fun). It is then served with a small dollop of real whipped cream and sprinkles! You could also add crunchy granola to the top. They are always all smiles – especially because it is called a sundae!
