I have a yummy recipe I’d like to share with you all today. So, while technically this is a breakfast food, sometimes we have “breakfast for dinner”. It’s exactly what it sounds like. Breakfast foods at dinner time. I enjoy pancakes, waffles, eggs and bacon… but I’m not a huge breakfast person. I’m not a huge morning person… If I’m not awake enough to make breakfast, I’m definitely not awake enough to eat it. So, feel free to use this recipe whenever, breakfast isn’t just for breakfast.
Chop the spinach and slice the mushrooms. Grease or butter a frying pan on medium high heat. Sauté your mushrooms. Add the chopped spinach and cook for approximately two minutes. Crack your eggs into a cup and break with a fork by stirring vigorously. Add any seasonings you would like to the eggs. Garlic powder and seasoned salt are a few of my faves. Salt and pepper are other ideas. Stir until well mixed. Pour the eggs into the pan and mix in your spinach and mushrooms. Always cook eggs thoroughly, eating raw egg can cause health issues. Serve and Enjoy!
